A. Forklift checklist completed. Pallets unloaded from incoming container trucks. Pallet tags on pallets of loins. Loins pulled for sampling. Pallets moved from anti-room to freezer. Location of pallets in the freezer recorded. Pallets transferred from freezer to thaw room. Trash removed from freezer/thaw room.

B. 1. Perform forklift checklist at the beginning of each shift. 2. Unload pallets of loins from container trucks and stage in anti-room. 3. Apply pallets tags to pallets of loins. 4. Transfer pallets from anti-room to freezer and note location of each pallet on freezer location form. 5. Pull two loins from each pallet and place in a bin for sampling by QC. 6. Pull pallets from freezer and transfer to the thaw room for racking. 7. Remove bins of trash from thaw room/freezer and notify sanitation to remove trash.

Perform Forklift inspection at the beginning of shift and fill out the Powered Industrial Truck (PIT) Inspection Form. Report any problems to supervisor immediately. TASK 2: Unload pallets from container trucks and stage in anti-room. TASK 3: Apply pallet tags to pallets of loins. 1. Collect pallet tags from Loin dispatcher. 2. Match each pallet tag to the correct pallet by matching the tags on the pallet to the pallet tags received from the Loin Dispatcher. 3. Apply the pallet tags to the pallet so they are clearly visible. TASK 4: Transfer pallets from anti-room to freezer and note location of each pallet on freezer location form. 1. Move each pallet from the anti-room to the freezer stacking each pallet in an available location. 2. Note the pallet location on the freezer location form ensuring all the information for the pallet location is complete 3. Turn over freezer location form to the Supervisor after all pallets have been transferred to the freezer. Task Performance Standard Each pallet will be transferred to the freezer and its location documented on the freezer location form. Loin Dispatcher will have the freezer location form. TASK 5: Pull two loins from each pallet and place in a bin for sampling by QC. 1. On each pallet, cut a hole in the shrink wrap plastic only large enough to remove one loin. 2. Remove two loins from the pallet and transfer to a bin, keeping all the loins from each container together in one bin. TASK 6: Pull pallets from the freezer and transfer to the thaw room for racking. 1. Receive schedule for pulling loins from Loin Dispatcher. 2. Locate pallets of loins from the schedule as needed and transfer to the thaw room. 3. Locate the pallets of loins in the thaw room as directed by the loin dispatcher. TASK 7: Remove bins of trash from the thaw room/ freezer as needed and notify sanitation when ready for pickup.
